Image choice
The Monero Project does not publish an official Docker image. The commonly used community image is sethforprivacy/simple-monerod (built from official releases). Read its Dockerfile, pin a version tag or digest, or build your own image from the verified binary.

bitmonero:Docker publishes ports on all interfaces unless you give a host IP. The 127.0.0.1: prefix keeps the RPC private; only the restricted RPC is enabled here, never the full one.
